Banana Bran Muffins

These banana bran muffins with chocolate chips are really delicious and moist.

A good way to use up those ripe bananas, and its also a healthy muffin full of extra fibre from the bran.

My grandkids love them for the chocolate chips!

This recipe makes 24 delicious muffins.


  • 3 ripe bananas
  • 1 cup brown sugar
  • 3 eggs
  • 1 1/2 cups milk
  • 1 1/2 tbsp. lemon juice or vinegar
  • 1/2 cup cooking oil
  • 1 1/2 cups bran flakes
  • 2 1/2 cups flour
  • 3 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 1 cup chocolate chips
  • 1/2 cup chopped walnuts


  • Preheat oven to 375F.
  • Grease 2 pans of 12 muffin cups each or use paper liners.
  • Mash bananas in a bowl, stir in brown sugar.
  • Add eggs, one at a time and beat well.
  • Combine lemon juice with milk, stir, and add to mixture.
  • Add oil and stir.
  • Stir in the bran and set bowl aside.
  • Measure flour into another large bowl and add all other dry ingredients.
  • Stir in chocolate chips.
  • Make a well in center and add all liquid ingredients at once, folding the dry ingredients into the liquid just enough so all is moistened.
  • Divide into muffin cups and sprinkle with walnut pieces.
  • Bake @375F about 25 minutes.
  • Remove from oven and let rest in pans for 5 minutes, then remove to wire rack to cool completely.
