Banana Cookie Recipe

These banana cookies are a nice addition to kids' lunch boxes or just eaten as a nice light snack.
This is a soft banana cookie for simple cookie recipes, which will make about 3 dozen cookies.
- 2/3 cup shortening
- 1 cup sugar
- 2 eggs
- 2 medium, ripe bananas, mashed (1 cup)
- 2 1/2 cups flour
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 tsp. vanilla
- 2 tbsp. sugar
- 1/2 tsp. cinnamon
- Cream shortening and sugar.
- Add eggs, one at a time and beat in.
- Sift dry ingredients.
- Add alternately with mashed bananas.
- Add vanilla.
- Drop by spoonfuls onto greased cookie sheets.
- Sprinkle with sugar and cinnamon mixture.
- Bake @350 F for 12-15 minutes.
- Cool on wire rack.
