Beef Barley Soup Recipe

This Beef Barley Soup recipe is another great wholesome soup with lots of flavor, very satisfying and enjoyed by all with its small pieces of meat, and lots of barley.

As it is full of vegetable goodness it also can be a meal in itself, or serve with a crusty roll on the side.

Some cooks like to add chopped cabbage to this soup recipe, but I do not.

This recipe will make 6-8 servings.


  • 1 lb. lean stewing beef, cut into small pieces
  • 1 tbsp. cooking oil
  • 5 cups water
  • 2 cups canned tomatoes
  • 1 large onion, diced
  • 2 tsp. salt
  • 1/4 tsp. pepper
  • 2 cups sliced carrots
  • 1 cup sliced celery
  • 3/4 cup quick cooking barley
  • 2 tsp. beef granules


  • In a large soup pot, brown the small meat cubes in the oil.
  • Add water, tomatoes, onion, salt and pepper.
  • Simmer covered for about 45 minutes.
  • Add carrots, celery, barley and beef granules.
  • Simmer covered for 45 minutes longer.
  • Remove from heat, adjust seasonings, and serve.

    Note: If you prefer a thinner soup, add more tomatoes or water.
