Best Potato Salad Recipe

This Best Potato Salad Recipe is a much loved welcome addition to many meals.

I make this easy potato salad recipe all summer long. It goes so well with that irresistible barbecue.

There are a lot of recipes for this type of salad available for your dining pleasure, but to me this is the best ever.

Here I will share my favorite recipe which makes 6-8 servings.


  • 6 large potatoes
  • 1/3 cup Italian dressing
  • 1/4 cup green onions, sliced
  • 1 cup celery, diced
  • 1/2 cup radishes, sliced or
  • 1/2 cup red peppers, diced
  • 6 hard cooked eggs, peeled and chopped
  • 1/2 cup light mayo
  • 1/2 cup light sour cream
  • 2 tsp. prepared mustard
  • 1/2 tsp. salt
  • 1/4 tsp. ground black pepper


  • Peel potatoes and cook in salted boiling water until tender but still firm.
  • Drain and cool slightly. Cut into 1 inch cubes.
  • In a large bowl combine potatoes with the Italian dressing, cover and chill in fridge.
  • When chilled, add vegetables and chopped eggs.
  • In a small bowl combine mayo, sour cream, mustard, salt and pepper.
  • Pour over potatoes, vegetables and eggs in large bowl.
  • Chill for several hours or overnight to blend flavors.
