Canning Beets



This is how I go about canning beets, another great addition to home canning recipes.

Any size of glass canning jars can be used for this easy home canning recipe.

As this is a pickle canning recipe, the jars do not need to be processed after filling, just tightly sealed. Clean Cheese Whiz jars work well, as do jars from bought tomato sauces, etc., as long as the lids are not damaged.

Here are the home canning instructions.



Ingredients:

  • 3 quarts beets
  • 1 pint vinegar (cider preferred)
  • 2 cups sugar
  • 3 tsp. ground allspice
  • 12 cloves

Method:

  • Cook beets until tender.
  • Peel in cold water.
  • As soon as peeled, cut in pieces and drop into hot, sterilized jars.
  • Add 4 cloves and 1 tsp. allspice to each jar.
  • Make the brine, boil for 3 minutes.
  • Pour over beets in jars.
  • Seal.
