Carrot Slaw





A very easy to make Carrot Slaw recipe which really is refreshing served in a sandwich or on a hamburger bun or with a hot dog. Great also as a quick grated carrot salad side dish.

Julienne carrots using a mandolin if possible, or slice into very fine carrot sticks.

A very easy recipe for carrot salad using only a bit of a zesty Italian dressing, which is also very low in calories.

This can also be made into a simple grated carrot salad, if a mandolin is not handy, but finely julienne carrots look so nice and add a little crunch.

This fresh carrot recipe will make about 2 cups.


Ingredients

  • 4 large fresh carrots
  • 2 tbsp. Zesty Italian Dressing

Method

  • Wash and peel carrots.
  • Finely julienne using a Mandoline if possible, or grate.
  • Place into a medium size bowl.
  • Add just enough zesty Italian dressing to moisten, tossing together lightly, about 2 tablespoons.
  • Ready to use.
  • This carrot slaw will keep well if refrigerated for about a week.
