Easy German Potato Salad





This easy German Potato Salad recipe was started by my father-in-law many, many years ago and has been carried forward now to the third generation of great family cooks. My sister-in-law still makes it, and her daughter also.

My niece calls this recipe for German potato salad "German Yellow Potato Salad" as it is made with Yukon Gold potatoes.

So here is the recipe for how to make potato salad that is easy and very tasty.



German Yellow Potato Salad

  • Boil potatoes with skin on.
  • Peel and slice potatoes.......add some salt, pepper, and about 2 TBSP. vinegar. Toss lightly.
  • Separate 3 or 4 eggs.
  • Beat yolks with about 1 tsp. Horseradish Mustard.
  • Slowly add about 1/2 Cup Veg. Oil while still beating.
  • In separate bowl, beat egg whites just a little, then mix this with the yolk mixture.
  • Taste it.......sometimes you might want to add a little more Mustard.
  • Pour over potatoes.
  • Add some hard boiled eggs and some dill weed and mix well.

    (I also put some finely diced pickles in it)....it's really good that way.

    I think it's always better the next day cause everything soaks together of course. Onions are good too.
