Easy Salad Dressing

I love to cook and I love to create new recipes. One of my favorite things to do in the kitchen is to make homemade salad dressings.

Salad dressing can be made from as little as two ingredients. It takes a matter of a couple of minutes to whip together and the flavor combinations are endless. When you make your own salad dressing you don't have to worry about artificial ingredients, chemical preservatives or any of those ingredients that are under such heated debate like high fructose corn syrup. When you make your own dressing, you know exactly what you are putting into it and you can choose the most nutritious ingredients possible. After all, the dressing does not have to be just something you put on your salad to add moisture and flavor. It can actually add nutritional benefits.

Once you know what flavor combinations you like, you will know exactly what kind of salad dressing you want to make based on which fruits and veggies you are including in your salad.

One of my favorite, stand-by salad dressings is made from…

1 cup raw cashews
the juice of one lemon
1 whole garlic clove
1 small handful of fresh, flat-leaf italian parsley
1 large handful of fresh basil leaves
2 fresh medjool dates
salt & pepper, to taste
water until desired consistency

I just throw all of the ingredients into my high powered blender and blend. I start with about 1/2 cup water and add more, if necessary, until I get the consistency I want.

This dressing is delicious! The cashews make it nice & creamy. The flavor of the basil really stands out and the dates add just enough sweetness.
