Fresh Apple Cake Recipe
This fresh apple cake recipe has a cookie dough or short dough base, then a layer of a cream cheese mixture covered with slices of apple and topped with almonds.
In order to make this raw apple cake recipe you require a round 9 inch spring form pan, making the removal of the cake very easy.
It is another excellent apple cake recipe and tastes even better with a little whipping cream on top.
Ingredients:- Short dough:
- 1/2 cup butter or margarine
- 1/3 cup sugar
- 1/2 tsp. vanilla
- 1 cup flour
- 1/4 tsp. salt
- Filling:
- 1 8 oz. pkg. cream cheese
- 1/4 cup sugar
- 1 egg
- 1/2 tsp. vanilla
- Apple Mix:
- 1/3 cup sugar
- 1/2 tsp. cinnamon
- 4 cups peeled , thinly sliced apples
- Topping:
- 3/4 cup sliced almonds
Method:- Preheat oven to 425 F.
- In a medium bowl, mix butter, sugar and vanilla until light.
- Stir in flour.
- Using a 9" spring form, spread dough evenly over bottom and an 1" up the sides of pan.
- Mix sugar and cream cheese until well blended.
- Add egg and vanilla, beat until light.
- Spread on top of dough in pan.
- Mix apples with cinnamon and sugar to coat.
- Spread on top of cream cheese mixture.
- Sprinkle evenly with the almonds.
- Bake at 425 F for 10 minutes, then reduce heat to 375 F and bake another 45 minutes.
- When cooled, using a sharp knife loosen the dough on the inside of the pan ring, open the ring and remove.
- Cut the cake into pie shaped pieces.
