Grilling Zucchini





Grilling zucchini slices while they are still fairly small in size, 6-8 inches or so, is a good choice for a tasty vegetable side dish during summer while you have the BBQ going.

There are many recipes for cooking with zucchini, as the very mildly flavored, versatile zucchini can also be used in baking cakes, cookies, casseroles and soups.

Here is how to prepare zucchini for the BBQ and my easy grilled zucchini recipe, which will make nice moist and flavorful slices.



Ingredients:

  • whole small zucchini, up to 6 inches long
  • olive oil
  • fresh finely chopped oregano
  • fresh finely chopped parsley
  • grated parmesan cheese, optional


Method:

  • Have grill on medium heat.
  • Wash zucchini well, trim ends and dry with paper towel.
  • Cut in half lengthwise.
  • Brush with olive oil on cut side.
  • Arrange on grill with oiled cut side down.
  • Brush rest of unpeeled zucchini with oil.
  • Keep lid closed and cook for 6-8 minutes.
  • Turn zucchini over, brush top side with more oil and sprinkle with oregano and parsley.
  • With lid closed cook another 4-6 minutes (depending on thickness of zucchini) or until tender.
  • Remove to plate and sprinkle with parmesan cheese.

Helpful Hint

Cooked dish too salty

  • add a little water or milk, or
  • cook a raw potato along with the food, remove before serving the dish, or
  • add a pinch of sugar, this will not sweeten the dish but counteract the saltiness

  • Peel onion

  • easily peel onion by cutting into 1/4's lengthwise, then
  • place skin side down and cut through root end to just above peel
  • hold down with knife and pull the onion piece off.

  • pickling cucumbers, green beans, carrots
  • Marjoram
  • fresh or dried for soups, meat dishes, casseroles
  • Sage
  • fresh or dried
  • pork, poultry, lamb, casserole dishes, fish
  • Rosemary
  • excellent with lamb
  • vegetable dishes, casseroles
  • Garlic
  • excellent with lamb, all meats, sauces, casseroles, salads
  • use sparingly
  • very healthy
