Hot German Potato Salad





This Hot German Potato Salad is a great dish to serve especially during the cooler months of the year, and a nice change from scalloped or mashed potatoes.

It is easy to make, does not require mayo and is not a heavy salad. It should be served warm and can be reheated without any problem.

It is often served along with sauerkraut and sausages. It is also good served with baked or broiled fish, chicken, sausages or ham.

This recipe will make 4-5 servings.



Ingredients:

  • 4 large potatoes
  • 6 slices bacon
  • 1 medium cooking onion
  • 1/4 cup vinegar
  • 3/4 cup beef broth
  • 1 tsp. sugar
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 egg yolk

Method:

  • Boil potatoes in skins until tender, about 15 minutes.
  • When cool enough to handle, peel and cut into 1/2 inch cubes.
  • Put into large bowl and set aside.
  • Dice bacon and fry until crisp. Remove bacon bits with slotted spoon,and set aside
  • Leave 2 tbsp. of bacon drippings in frying pan.
  • Dice the onion and cook in the bacon drippings until transparent.
  • Add the vinegar, broth, sugar, salt and pepper to the cooked onions in pan.
  • Now add the beaten egg yolk and cook all until slightly thickened, stirring constantly.
  • Lastly add the bacon bits.
  • Pour over potatoes in bowl and mix gently.
