Plum Cake Recipe
Here is a plum cake recipe that is very easy and quick to make.
Especially in the early fall when prune plums are at their best, a fresh plum cake can often be found on my kitchen counter, ready to be enjoyed with a cup of tea or waiting to be served as dessert.
The plum cake is very good on its own, but I like to serve it with a little whipped cream on top.
You will need a 9x12 inch cake pan to bake this great and easy recipe for plum cake.
Ingredients:- 1 1/2 cups flour
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 cup sugar
- 1 egg
- 3/4 cup milk
- 1/4 cup oil
- 1/2 tsp. vanilla
- 25 prune plums, cut in half lengthwise, pit removed
Method:- Preheat oven to 400F.
- Grease and flour 9x12 cake pan.
- Sift dry ingredients into a medium bowl.
- In a larger bowl, beat egg, milk and oil together.
- Add sifted dry ingredients to liquids.
- Beat well.
- Pour batter into greased and floured cake pan.
- Arrange fresh plums on top of batter.
- Topping:
- 1/2 cup flour
- 1/2 tsp. cinnamon
- 1/2 cup sugar
- 1/4 cup butter or margarine
- Make a crumble from ingredients and sprinkle over top of plums.
- Bake at 400 about 55-65 minutes.
