Simple Meatloaf Recipes





These simple meatloaf recipes are all delicious, quick easy meatloaf recipes. Leftovers also make very tasty meatloaf sandwiches.

The first recipe listed I make using lean ground beef and oatmeal, and then top it with salsa.

This is good served with mashed potatoes and broccoli for instance. Carrots are another good vegetable that goes well with meatloaf.

The next one, my favorite, uses both ground beef and ground pork with hard boiled eggs in the center, and this delicious meatloaf recipe is wrapped in bacon slices.

It also looks nice when presented, showing an egg slice in the center.




Basic Meatloaf Recipe

Ingredients:

  • 1 lb. lean ground beef
  • 2 cloves garlic, minced
  • 1/2 medium onion, minced
  • 1 egg, beaten
  • 1/4 cup oatmeal
  • 1/4 cup water
  • 2 tsp. worchestershire sauce
  • 1 tsp. prepared mustard
  • 1 tsp. season salt OR Montreal steak spice
  • 1/4 tsp. pepper, freshly ground
  • 1/2 cup Salsa

Method:

  • Combine all ingredients well, form into a loaf, place into greased loaf pan and bake for 45 minutes @325 F.
  • Spread with salsa and bake 15 minutes longer.
  • Remove from oven, let stand 5-10 minutes.
  • Slice and serve.

Delicious Meatloaf Recipe

Ingredients:

  • 1 lb. lean ground beef
  • 1 lb. ground pork
  • 2 eggs, beaten
  • 1/2 cup onion, finely chopped
  • 2-3 cloves garlic, finely minced
  • 1/2 cup rolled oats
  • 1/4 cup water
  • 2 tsp. season salt
  • 1 tsp. ground coriander
  • 1/2 tsp. black pepper, ground
  • 3 tsp. worchestershire sauce
  • 2 tsp. Dijon mustard
  • 3 eggs, hard boiled and peeled
  • 4-5 slices raw bacon

Method:

  • Combine ground meats with the other ingredients. Divide mixture in half.
  • Cut the ends off the hard boiled eggs and lay down in a row in center of half the meat mixture.
  • Cover with second half of meat mixture.
  • Press firmly around the edges.
  • Place into greased loaf pan.
  • Lay strips of bacon on top lengthwise.
  • Bake in 350F oven for 1 1/4-1 1/2 hrs.
  • Let stand 10-15 minutes before slicing.

Helpful Hint

  • Gravy too light
  • brown 1/2 tsp. sugar in a little butter or margarine, add to gravy and bring to boil
  • this will not change the flavor of the gravy

  • Onions too brown
  • do not add water, this will make the gravy or sauce bitter
  • quickly remove meat, wipe pot clean, add a little fresh oil and fresh onion, continue browning
